Now we are really showing off. Tasmanian fallow venison and wallaby with a touch of pork is combined with fresh herbs, garlic and cranberries. The sweetness of the cranberries slowly caremelise with gentle cooking. Best served with redcurrant jelly and a celeriac mash.
